Nature and the eco system does not work the way you are gardening. In nature the soil builds over time developing layer after layer of rich nutritious soil for growing plants. So what happens when you till or turn the soil is that you have disturbed the natural order of the eco system. You have built an environment that the weeds will flourish and take over the garden and leave the veggies in the dust. So this is why the traditional garden used weed killer and fertilizers. If you leave the soil alone and only add compost to the top layer your garden will flourish.
The weeds will do much better when you turn the soil. There is a whole set of events that happen when you turn under your garden. Your soil will not retain water as well. The level that the nutrients are is not where the roots of the vegetables are.
